Happy Halloween!
After the popularity of my Peter Piper O'Lantern last year, I figured I needed to up the ante this time around. So, I present not one but three baby eggplant'o'lanterns.

Posted by: +mojan. at October 31, 2003 10:57 AMEggplants are surprisingly good for jack'o'lanterns -- they're easy to carve and hollow out, and the purple skin and white flesh makes for a high-contrast, spooky look. Just be sure to have some lemon juice or white vinegar on hand to dab on the cut parts -- otherwise they'll oxidise brownish, like an apple.
I used baby eggplant, which were too small for candles, but a full-size eggplant would do quite nicely. (And they're a lot cheaper than pumpkins right now, at least at my store.)
